with calcium chloride you can improve the renneting of e.g. pasteurized milk.

Description:
Besides the Casein, Calcium is the most important factor for the coagulation. Pasteurized milk has a lack of calcium and also in some periods of the year there might be to less calcium - this can be compensated by adding up to 28 ml per 100 litres of milk.
